I decided that nice gooey cheeses, and the bite of some red onion would be perfect. Seasoned pulled pork mixed with real pork chorizo, served in a bold sauce that features a delicious Tex-Mex taste and texture.
Close the lid and continue to grill until the cheese has melted. Cut into 4 slices. Mozzarella, which we use here, is a good substitute. When bacon is done and fat is rendered, remove bacon from pan, drain, and save for another use.
